Foodie Friday - Peanut Pork Curry with Crunchy Mango Salad

My husband requests this peanut pork curry at least once a week and pesters me until I make it! It's really tasty and pork is such an underrated meat, this is a great way to bring it into your diet. The pork fillet is a very tender cut and the way that it's cooked in this curry makes it fall apart beautifully. It's so easy to put this together and this makes around 4 portions so you can save some for lunches.


I love to have this with basmati rice with added vegetables (as there are none in the curry) and a crunchy mango salad.


 

Peanut Pork Curry

Time: 40 minutes

Serves: 4


Ingredients:

1 pork fillet

2 tbsp curry powder

3 tbsp smooth peanut butter

4 tbsp tamari soy sauce

Water

1/2 lime juiced

Fresh coriander

Black pepper


Crunchy mango salad:

1 small mango

1 red pepper

1/4 red cabbage

1/2 lime juiced

Salt


Method:

  1. Dice the pork fillet and coat with the curry powder. Marinate in the fridge for at least an hour.

  2. Seal in the pan and add the tamari and peanut butter then add water until it's just covered. Stir to combine the ingredients and simmer on a low heat for 40 minutes.

  3. While simmering add the lime juice, coriander and fresh black pepper to taste.

  4. Chop the mango, red cabbage and pepper lengthways and mix in a bowl. Add the lime juice and salt to taste and mix again.

  5. When the curry has thickened and the pork is tender, serve with rice and the mango salad.
