Foodie Friday - Orange & Cacao Almond Cake

I am 26 days into a 60 day refined sugar free challenge, and the only thing keeping me going is this cacao and orange almond cake! You wouldn't believe it doesn't have refined sugar in it when you taste it, it's so sweet and delicious. Also, it uses almond flour so it's gluten free. It's so quick and easy to make this cake, you could do it in 30 minutes!
You could play around with the ingredients to create different flavours, I'd recommend trying lemon and rosemary or lime and coconut, depending on your palate. I like serving it with some Greek yogurt and raspberries.

Orange and Cacao Almond Cake
Time: 30 minutes
Serves: 8
Ingredients:
200g almond flour
60ml extra virgin olive oil
60ml orange juice (squeezed from an orange, not a carton)
60g honey
2 eggs
1 tbsp orange zest
1/2 tsp baking powder
1/2 tsp baking soda
2 tbsp cacao nibs
2 tbsp flaked almonds
Method:
Preheat the oven to 180 degrees Celsius.
Line a loaf tin with greaseproof paper.
Add all ingredients - except the flaked almonds - to a mixing bowl and mix.
Pour batter into the lined baking tin and top with flaked almonds. Bake for 20 minutes, then cover with tinfoil and bake for another 5 minutes.
Serve warm or cold!
