Foodie Friday - Delicious Proper Tagliatelle Carbonara Recipe

It was my second wedding anniversary on Tuesday and my husband had one request for me - make my authentic carbonara recipe (by authentic I mean NO cream). This is his absolute favourite treat meal, and because it's not the 'healthiest' meal out there, we only have it once in a while (e.g. New Years Eve, his birthday and our anniversary).


What I love about this dish is that it's full of flavour and so easy to make. The majority of carbonara dishes you'll get in the UK have cream in them. It's a very popular microwave meal and almost all of the microwave carbonara you'll find on the supermarket shelves contain seed oils, flour and additives. When you can make it yourself so quickly and easily, why not treat yourself to a proper salty, cheesy carbonara instead of a gross microwave version?

 

Proper Tagliatelle Carbonara Recipe

Time: 20 minutes

Serves 2


Ingredients:

200g dry tagliatelle

50g pancetta (nitrate free if you can get it)

50g Parmigiana Reggiano - grated

50g pecorino - grated

25g butter

3 garlic cloves

3 eggs

Black pepper to taste


Method:

  1. Melt butter in a frying pan and add the pancetta.

  2. After cooking the pancetta for 5 mins, boil a pan of salted water and cook your tagliatelle as per it's instructions. It tastes best when slightly al dente. Stir it from time to time to allow it to break up.

  3. When the bacon is frying, add the three garlic cloves whole. Cook slowly.

  4. Crack the 3 eggs into a dish and whisk. Add most of the grated cheese, leaving a sprinkle to put on the dish at the end. Season with black pepper and mix.

  5. When the pancetta is crispy and the pasta is cooked, crush the garlic in the pan. Add the pasta straight from the water. Allow some of the water to go into the pan, it will help make the sauce silky. Keep the pan of water for now.

  6. MOST IMPORTANT PART! Take the frying pan off the heat then pour in the egg and cheese mix. If you add when it's on the heat it will turn into scrambled eggs. Mix so it's coating the spaghetti. If you'd like it to be saucier, add some more pasta water.

  7. Serve with some more black pepper, the rest of the cheese and some fresh parsley for colour.
